Barbara's Quinoa Tabouli

This delicious recipe is quick, easy, and makes a great summer dish.  Add it to salad greens or grilled chicken for a heartier meal.

Wash quinoa in warm water, drain, and cook in broth or water. Mix lime juice, lemon juice, oil, garlic, oregano, salt, and pepper in a large bowl. Add hot, cooked quinoa and stir well, completely coating the quinoa with the oil mixture. Cool and refrigerate completely. Stir in onion, parsley, cilantro, and serve.

All organic and free range:
  • 1 c uncooked quinoa
  • 1½ c chicken broth (but water would work, of course)
  • ½ c red onion, diced
  • 1 c parsley, chopped
  • 1 c cilantro, chopped
  • ¼ c lime juice
  • ¼ c lemon juice
  • ½ c avocado oil
  • 2 cloves garlic, crushed
  • 1 t dried oregano
  • ½ t salt
  • ½ t pepper
Those who think they should have no time for healthy eating, will sooner or later have to find time for illness.
